Job Title: Specialty Chef – Dim Sum & Chinese Cuisine Company: Doma & Boma Foods Location: Park Street, Kolkata, West Bengal Employment Type: Full-Time Reports To: Executive Chef / Kitchen Manager About the Role We are seeking a highly skilled and passionate Specialty Chef with deep expertise in dim sum preparation and authentic Chinese cuisine to elevate our culinary team at Doma & Boma Foods. The ideal candidate possesses a profound understanding of traditional Chinese flavor profiles, high-heat wok techniques, and the delicate artistry required for hand-crafted dim sum. In this role, you will thrive in a high-volume, fast-paced culinary environment while serving as a guardian of our restaurant’s quality, consistency, and presentation standards. Key Responsibilities Culinary Execution & Artistry * Dim Sum Production: Expertly prepare, fold, pleat, and steam a wide variety of traditional and modern dim sum (e.g., har gow, siu mai, bao, and dumplings) with precision and aesthetic consistency. * Wok Station Mastery: Execute flawless wok cooking, demonstrating a firm grasp of wok hei (breath of the wok) for stir-fries, noodle dishes, and fried rice, ensuring optimal texture and temperature. * Recipe Adherence: Strictly follow established recipes, portioning guidelines, and plating specifications to guarantee a uniform dining experience for every guest. * Prep & Mise En Place: Efficiently set up, stock, and maintain ingredient stations with precise cuts of meat, seafood, vegetables, and house-made sauces prior to service. Kitchen Operations & Collaboration * Team Dynamics: Collaborate seamlessly with the kitchen and front-of-house staff to ensure smooth service timing and rapid ticket execution across our outlets. * Inventory Management: Assist with daily stock rotation (FIFO), inventory tracking, and minimizing food waste without compromising quality. * Equipment Care: Properly operate, clean, and maintain specialized kitchen equipment, including commercial steamers, high-pressure wok burners, and dough mixers. Safety, Hygiene & Compliance * Sanitation Standards: Maintain an immaculate workspace by strictly following daily cleaning checklists and conducting regular deep cleaning of stations, cutting boards, and cooking surfaces. * Food Safety: Strictly adhere to all health and safety regulations, including proper temperature controls, cross-contamination prevention, and safe food storage protocols. Qualifications & Requirements * Experience: Minimum of 1 year of proven experience as a Line Cook, Station Chef, or Dim Sum Chef in an authentic Chinese or Pan-Asian kitchen. * Technical Expertise: Proficiency in traditional Chinese cooking techniques, including high-heat wok tossing, steaming, braising, and intricate dough work/pleating. * Precision Skills: Strong knife skills with a keen eye for detail, consistency, and aesthetic plating. * Stamina & Adaptability: Ability to remain composed and efficient under pressure in a fast-paced, high-temperature kitchen environment. * Communication: Strong interpersonal skills and the ability to communicate effectively with a diverse kitchen team. * Flexibility: Willingness to work a flexible schedule, including evenings, weekends, and major public holidays as dictated by business needs.
